Rajama masala

Ingredients:
Boiled Rajma- 1 large bowl (kidney beans)
Mustard seeds - 1/2 tsp
Cumin seeds -1/2 tsp
Curry leaves - 4-5 pieces
Turmeric powder - 1/4 tsp
Red chilli powder - 1 tsp
Coriander powder - 1tsp
Garam masala - 1tsp (spice powder)
Onion - 2 finely chopped
Tomato - 1 finely chopped
Garlic paste - 1tsp
Ginger paste - tsp
Salt - as required
Oil- 1tbsp
Coriander leaves - 1 bowl finely chopped

Method:

1. Soak the rajma over night and then make two vessel of pressure cooker.

2. Hit the oil in pan add mustard seeds and cumin seeds, let them crackle now add curry leaves add the chopped onion and saute them till they get translucent and changes its color to brown.

3. Add ginger and garlic paste in the onion and saute them now add chopped tomatoes till it leaves the oil, add half of the chopped coriander leaves and mix it well.

4. Now add turmeric powder, red chilli powder, coriander powder, garam masala and mix it saute for some time and add boiled Rajma add salt to taste.

5. Now add water to make the gravy and left chopped coriander leaves and let it boil for some couple of minutes add 1 tsp of butter and it's ready to serve.

Prawns crispy fried

Ingredients:
Prawns - 1bowl or 7-8 pieces
All purpose flour - 4 tsp
Corn flour - 2 tsp
Corn meal - 1 tsp
Red chilli powder - 1 tsp
Water - as required
Salt - as required
Ginger paste - 1/2 tsp
Garlic paste - 1/2 tsp
Egg - 1 piece
Bread crumbs - 1 large bowl
Oil - for frying

Method:
1. Clean the prawns and remove the excess water from the prawns. Now apply ginger garlic paste and salt and keep the marinated prawns aside for 5 minutes.
2. Now beat the egg add all purpose flour, corn flour and corn meal, red chilli powder, salt and add water to make the batter of pouring consistency.
3. Take the bowl of bread crumbs.
4. First take a piece of prawn deep in the batter remove the excess of batter and coat with Bread crumbs.
5. Do this steps for the rest of the pieces and may keep in fridge for some time. It's totally optional. You can also directly deep fry the same.
6. Deep fry the prawns on medium flame and it's ready to go.

Palak pakoda

Ingredients :
Spinach - 2 cup finely chopped
Chickpea flour - 3 tbsp
Green chilies - 4-5
Garlic - 5-6 cloves
Cumin seeds - 1/2 tsp
Sesame seeds - 1tbsp
Red chilly powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Salt - as per taste
Soda - 1 pinch
Oil - for deep frying

Method :

1. First clean the spinach ( palak) and remove the excess stems and wash it properly.

2. Strain the spinach and chop it very Finley.

3. Take the green chillies, garlic cloves, cumin seeds and make the paste of the same.

4. Now take one bowl add chickpea flour in that add finely chopped spinach, the green chili paste, red chilli powder, turmeric powder, sesame seeds and salt as per taste and mix it well.

5. Now add some water to the mixture and make a thick batter add pinch of soda and mix it well and 1 tsp of hot oil and mix it well.

6. Heat the oil in pan and drop the battery with five fingers together and put small small batter. While putting batter gas should be on small fame after done with the putting of the batter increase the flame and deep fry till gets golden brown.

7. Serve hot with the curd or tomato sauce. It goes well with tea as snakes.

Home made chocolate cake

Ingredients:
1. All purpose flour- 2 cups
2. Sugar - 1 1/2 cup
3. Milk - 1 1/2 cup
4. Unsalted butter - 3/4 cup
5. Milk powder - 1 cup
6. Banking powder - 1tsp
7. Banking soda - a pinch
8.coca powder - 2 tbsp
9. Chocolate fudge/ ganash- for garnish
10. Cashew nuts - for garnish

Method:

1. Take one bowl sieve all the dry ingredients at a time that is all purpose flour, coca powder, baking powder, baking soda. After that add milk powder in to the same and keep aside.

2. now take milk and warm it add sugar into it and dissolve the same and keep aside to cool down.

3. Melt butter now add milk mixture into it and blend it with blender or use spatula to fold the mixture.

4. After mixing it properly slowly slowly add the dry mixture of flour and other ingredients and mix it well.

5. Blend it till the mixture gets properly mixed.

6. Now grease the mauld with little butter and sprinkle some flour. Remove the extra flour. Pour the cake mixture into the mould.

7. Set the microwave oven for 5 minutes and keep the mould inside the oven.

8. Check by inserting toothpick in the center of the cake, if it comes out clean it means it is properly cooked.

9. Demould the cake on the rack to get cool down. After that spread the chocolate fudge on the top of the cake and garnish with cashew nuts.

Muli paratha

Ingredients:

For stuffing:-
Radish- 1 big grated ( muli)
Green chilies- 2 finely chopped
Ginger- 1 tsp grated
Coriander leaves- 2 tbsp
Turmeric powder- 1/4 tsp
Red chili powder- 1 tsp
Coriander powder- 1 tsp
Cumin powder- 1 tsp
Garam masala- 1 tsp
Salt- as required

For dough:-
Wheat flour-1 cup
Salt- as required
Oil- 1 tsp
Water- as per need

For frying:-
Oil- as required

Method:-

1.Grate the radish add salt as per taste and keep aside for 15- 20 minutes.

2. Now squeeze the same and remove the excess water from the same. The extra water From the radish can be used to make the dough.

3. Take wheat, salt add water as to make dough and add oil make soft dough.

4. Now heat the pan add 1 tsp of oil as finely chopped green chili and grated ginger and grated radish, finely chopped coriander leaves saute the same.

5. Now in the given mixture add turmeric powder, red chili powder, garam masala, coriander powder, cumin powder and salt and saute till it gets properly cooked.

6. Now make dough soften and make the small balls of the same.

7. First roll the small roti out of the wheat dough, repeat the same again.

8. Take first roti put the stuffing as much as possible cover the same with another roti and press the corner properly so that stuffing will not come out. Now roll the same very solely and make the parathas.

9. Heat the griddle or tava and shallow fry the parathas will ample of oil and serve the same with fresh cured or butter or with any pickle of your choice.

TIPs- make sure that all the excess water gets removed from the grated radish otherwise there is a chance that it will break.

Bread roll

Bread roll

Ingredients:
Bread slices-6
Potato- 2
Onion- 1 small
Green peas- 1/2 cup
Green chilies finely chopped- 2-3
Garlic paste - 1 tsp
Ginger paste- 1/2 tsp
Coriander finely chopped- 1 tbsp
Lemon juice-1 tsp
Salt- as required
Oil- for frying

Method:

1. Wash the potato properly boil and peel them and smash them properly.

2. Take the green peas and boil then too and  roughly smash it.

3. Onion to be finely chopped

4. Now to make the filling take smashed potatoes, green peas, chopped onion add ginger garlic paste, finely chopped green chili's, chopped coriander strands, lemon juice and salt as per taste and mix it well.

5. To make the bread rolls take bread slices dip it in the water for few seconds take it out and press with the help of palm to remove excess water.

6. Now add 1 tbsp of filling on the wet bread and close it with both the hands and press it well to give roll shape.

7. Make all other rolls same as it is.

8 . heat the oil and deep fry all the rolls on high flam it it becomes golden brown.

9. Take out all the rolls on tissue paper to absorb excess oil.

10. Serve it hot with tomato sauce or any green chatni of your choice.

Tips:

Stuffing may vary by adding other boiled veggies and different spices.

It also goes very well with cottage cheese (paneer) and cheese with salt and paper

Grilled Mushroom Paneer Tikka





Ingredients:
mushroom- 6 pieces
cottage cheese- 6 cubes (paneer)
onion- 1
tomato- 1
lemon juice- 1 tbsp
olive oil- 1 tbsp
tandoori masala- 1 tsp
chat masala- 1/2 tsp
tomato kechup- 1 tsp
dried fenugreek leaves- 1 tsp
salt- as required


Method:

1. Wash the mushroom properly and keep aside. cut the cottage cheese into cubes , cut the onion into cubes and separate out from each other now take the tomato remove the pulp and also cut the same into cubes.

2. Now for the marination take bowl add the olive oil, lemon juice, tomato sauce, tandoori masala, chat masala, salt to taste and take dried fenugreek leaves on palm and rub the same so it will get crushed mix it well.

3. Add all mushrooms, cottage cheese, onion, tomato into marination and keep it aside for 10 minutes.



4.Take the wooden squeakers or toothpick and insert onion tomato, mushroom and cottage cheese one by one repeat this process once again and prepare the stick.




5. Now make all other squeakers and grill it in the microven  and serve it hot.

TIPS:

If microven is not available then you can use the tava by spreading little oil fry till it gets cooked properly.

Mushroom baby corn masala



Ingredients:
Mushrooms- 1 packet
Baby corn- 6-7
Red bell paper- 1 small
Yellow bell paper- 1 small
Onion finely chopped- 2
Tomato finely chopped- 1
Red chili powder- 1tsp
Turmeric powder- 1/4 tsp
Everest kitchen king masala- 2 tsp
Coriander seeds powder- 1 tsp
Cumin seeds powder- 1/2 tsp
Garlic paste- 1 tsp
Ginger paste- 1 tsp
Curd- 3/4 cup
Fresh cream- 2 tsp
Oil- 1 tbsp
Coriander- for garnish


Method:
1. Wash the mushrooms and slice it. Take the baby corn cut into 1&1/2 inch pieces and boil it. Take all the bell papers and cut it into cubes.

2. Heat the oil in pan put finely chopped onion saute it it's become golden brown then add ginger garlic paste and saute for a minute afterwards add finely chopped tomato's and saute it till it's become properly cook.

3. Now when oil is separated from the gravy add red chill powder, turmeric powder, everest kitchen king masala, coriander seeds powder, cumin seeds powder and saute for few seconds.

4. Now add the curd add mix it well

5. Now add sliced mushroom, boiled baby corn and cook for few minutes at the last movement add the bell peppers and salt as per taste.

6. take the mushroom baby corn masala into serving dish garnish with fresh cream and coriander.

Desi chat

Desi chat

Ingredients:
Wheat flour- 1 bowl
Boiled & peeled potato's- 2
Boiled & peeled carrot- 2
Chat masala- 1 tsp
Red Chili powder- 1 tsp
Chicken tandoori masala- 1 tsp
Cheese slices- 2
Chopped onion- 1
Salt- as required

For green chatni:
Mint leaves- 1/2 cup
Coriander leaves- 1 cup
Garlic- 4-5 cloves
Green chilli's- 2
Salt- as required
Lemon juice- 1 tsp

For tamarind chatni:
Tamarind- 1 cup
Jiggery- 3/4 cup
Salt- as required

Method:
1. Take wheat flour add salt and make a dough.

2. Make roti's out of the same.

TIPS:
Instead you can also use left over roti's to avoid step 1&2.

3. cut the roti's in to triangle and deep fry them till it gets crunchy or you can make them crispy in microven.

4. Take cheese slice cut into triangle and keep on crispy roti's.

5. Put smashed potato after that smash carrot and sprinkle chat masala, red chili powder, Chiken tandoori masala and salt then add tamarind chatni, green chatani .

6. Garnish with yellow shev  and coriander.

Fish nuggets

Ingredients:
Basa fish  fillets- 1
Lemon juice-1tbsp
Garlic paste- 1tsp
Ginger paste- 1/2 tsp
Turmeric powder- 1/4 tsp
Red chili powder- 1 tsp
Fish masala- 1 tsp
Olive oil- 4 tbsp
Refined flour- 4 tbsp
Semolina- 2 tbsp
Salt- as required


Method:
1. Wash the Basa fish fillet and cut it into cubes.



2. Take one bowl add ginger garlic paste, 1 tbsp olive oil, Lemon juice, red chili powder, turmeric powder, fish masala, salt mix it well add fish cubes and let it marinated for 15 minutes.


3. Take plate put refined flour and semolina, red chill powder, salt and mix it well.


4. Take marinated fish quote it with flour and shallow fry it with little oil.


5.serve it hot with salad or any sauce of your choice.



TIPS:
1.you can use any fish of your choice which should be skinless and boneless.
2. if fish masala is not available then you can use garam masala instead.

Home made Peda

Home made Peda



Ingredients:
Milk-500 ml
Lemon juice-1 tsp
Condensed milk- 1 cup
Saffron-pinch of strand
Cardamom powder-1/4 tsp
Purified butter-1tsp


Method:
1. Boil the milk add lemon juice and make paneer out of it.


2. Take heavy pan add purified butter add paneer stir for few minutes then add condensed milk, saffron, cardamom powder add stir till it gets thick.


3. Keep this mixture to cool under room temperature.


4. Make the peda's and garnish with pistachio.

Chiken tandoori

chicken tandoori





Ingredients :
Chicken breast- 500 gms
Rosemary- 2 strands
Lemon juice- 2 tbsp
Hung Curd- 1cups
Red chili powder- 1tsp
Turmeric powder-1/4 tsp
Tandoori chicken masala-3 tsp
Salt- as required


Method:
1. Take the chicken breast cut into half, put cuts on the same.




2. marinate first time with lemon and salt for around 10-15 minutes.

3. After it gets marinated insert rosemary leaves inside the cuts.


4. Take hung curd add red chill powder, turmeric powder, tandoori chicken masala, salt and mix it well then quote this mixture on chicken breast and marinate for 2 hours.


5 if tandoor is not available then use the frying pan. Out oil on chicken and  fry or tandoor it till it gets cooked properly.


6. Taken the chicken in serving dish and garnish with some onion and lemon slices.

Sesame Chicken Fried

Sesame Chicken Fried




Ingredients:
Boneless Chicken - 500 gms
Red capsicum - 1 small
Yellow capsicum - 1 small
Green capsicum -1 small
Cashew nuts - 10-12
Sesame seeds - 2 tbsp
Onion seeds - 1 tsp
Whisked egg - 1
Oil - 6 tbsp
Cornflour - 3 tbsp
Garlic finely chopped - 1 tbsp
Soya sauce - 1 tsp
Green chilly - 2
Salt - as required
Parsley - for garnishing


Method:
1. Whisk the egg add boneless chicken, 2 tbsp of oil ,2 tbsp of cornflour and salt as per taste. Marinate it for 20 minutes.


2.hit oil fry the cashew nuts and keep aside. Now stir fry the marinated chicken till it gets golden color, keep aside.


3. Now hit the remaining oil in a wok add chopped garlic , chopped green chillies, sesame seeds, onion seeds, chopped capsicum saute it in high flam for few seconds then add fried chicken, soya sauce, cashew nuts, salt and stir fry it well for a minute.


4. take it into serving dish and garnish with parsley... serve it with chili sauce.


5 enjoy the sesame Chiken fried.

Ingredients:
Sweet Lime Juice- 1 glass
Strawberry Pulp- 4 tbsp
Lemon juice- 1 tbsp
Sugar- as required.
Ice Cubes- 4-5

Method:

1.       Take sweet lime juice  add strawberry pulp, ice  cubes, sugar and lime juice and blend it in the mixer.

2. Serve it in the glass. Enjoy your refreshing chilled drink.

Dragon Fruit - 1
Milk - cup
Sugar – 2 tbsp

Method:
1.       Wash the dragon fruit and cut into half.



2.       Remove the pulp inside the fruit.

3.       Take pulp add milk and sugar and blend it in mixer.
4.       Pour the milkshake in the part of the fruit which has been scooped.

Tip : dragon fruit is very nutritious fruit and beneficial to diabetic and people having blood pressure.   

This milkshake will goes very well with combination of strawberry.

Mutton Biryani

Mutton biryani



Ingredients:
Basmati rice - 1/2 kg
Mutton (chops) -1/2 kg
Onion finely chopped (Julian cut) – 5-6
Curd - 2 cups
Red chilli powder - 2 tsp
Turmeric powder - 1/2 tsp
Garam masala – 1 tsp
Green chilli finely chopped - 2
Ginger & garlic (Julian cut) – 2tbsp
Ginger & garlic paste – 2tbsp
Coriander finely chopped – 1 cup
Mint Leaves finely chopped – 1 cup
Cumin seeds (sahi jeera) – 1 tsp
Salt - as required
Oil – as required
Cashew nuts – 15-20
Raisins   – 10-12
Pistachio – 10-12
Saffron – 1 pinch
Milk – 2 tsp

Potali ingredients
Black pepar – 6-7
Cardamom – 4-5
Tej patta - 2 leaves
Cloves – 4-5
Cinnamon - 1 inch


Method:

  1.  Wash and Soak the basmati rice for 1/2 hour.
  2. Take a muslin cloth and put potali masala into it and tightly pack it, boil water add salt cumin seed (sahi jeera) potali and bring it to a boil add soaked rice and cook till it gets 75% done. Strain the rice and pour cold water so cooking process gets stop.
  3. Mix pinch of saffron in warm milk and keep for 5 minute.  
  4. Make two portions of rice. Keep one part as it is and add saffron milk in another part .
  5. Take onion and deep fry it. Deep fry raisins , cashew nuts. Fry the ginger garlic (Julian cuts) till gets light brown.
  6. Take curd, turmeric powder, red chilli powder, salt, garam masala, chopped green chillies ginger and garlic paste, chopped mint leaves, coriander and half of the fried onion marinate this with mutton chops for 1/2 hour.



7.         Now take pot, pour half of the marinated mutton at the bottom, then add the layer of part of plain rice , sprinkle cardamom powder, fried onion, fried dry fruits, chopped coriander and pudina then add left over Marination. Thereafter give layer of another part of rice with saffron. Sprinkle cardamom powder, fried onion, fried dry fruits, chopped coriander and mint leaves. Now cover the pot with tight lid or use the dough for sealing the pot. thereafter keep this pot on high flame for 5 minutes and afterwards keep pan under the pot on slow flame for 45 minutes.




8.         Remove the dough from lid and take biryani on serving dish then add Julian almonds and pistachio. Fried Cashew nuts and coriander and mint leaves. Serve with slice of onion and lemon.
